Mesclun With Oranges and Olives

Ingredients:
12 cups mesclun or 12 cups other mixed salad greens
3 tablespoons olive oil
2 tablespoons orange juice
2 tablespoons balsamic vinegar
8 thin slices red onions, separated into rings
2 cups orange sections
2/3 cup kalamata olive (or mixed olives)
1/8 teaspoon salt
1/8 teaspoon black pepper
Directions:
1. Place greens in a large salad bowl.
2. For the dressing, combine the olive oil, orange juice and vinegar. Pour over greens and toss gently to mix.
3. Divide mixture among salad plates. Top with onion rings, orange sections and olives. Season to taste with salt and pepper.
