Using mesclun for the dressing itself is an inventive way to get the most from an ingredient-especially if your salad greens are mesclun, too. We used all green leaves to keep the bright color. Ingredients:
1 large garlic clove, minced |
1/3 cup extra-virgin olive oil |
3 tablespoons lemon juice |
1 teaspoon kosher salt |
2 1/2 cups loosely packed mesclun (green leaves only) |
Directions:
1. Blend all of the ingredients, stopping often to push greens closer to blender blades. 2. Nutritional analysis is per serving. |
