These are the best blueberry muffins I've ever had. My sister Merry made them for me and gave me the recipe, so she gets top billing! Her recipe calls them New England Blueberry Muffins.... I call them wonderful! Read more ! I always make a double batch because my whole family loves them!
Ingredients:
1 cup sugar
1/2 cup softened butter or margarine
2 eggs
1/2 cup milk
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 to 1 1/2 cups fresh or frozen blueberries
Directions:
1. Combine sugar, butter, eggs, and milk in a mixing bowl; beat well.
2. Blend flour, baking powder, and salt; add and mix until blended (about 1 minute). Fold in blueberries.
3. Spoon into 12 well-greased muffin cups, fill almost to the top of the cup.
4. Bake at 375F for 20 to 25 minutes.
5. (I have never had luck getting the muffins out in one piece unless I use paper liners.)
