Prep time includes chill time. Ingredients:
3 cups flour |
2/3 cup unsweetened cocoa powder |
1 teaspoon baking soda |
1 teaspoon salt |
1 cup butter, softened |
1 cup granulated sugar |
1/2 cup firmly packed brown sugar |
2 eggs |
1 teaspoon vanilla extract |
60 miniature marshmallows |
granulated sugar, for rolling cookies |
Directions:
1. Preheat oven to 350°F. 2. In large bowl, whisk together flour, cocoa powder, baking soda, and salt; set aside. In large mixer bowl, beat butter, the 1 cup granulated sugar, and brown sugar at medium speed until light and fluffy. 3. Beat in eggs one at a time; add vanilla. 4. Add flour mixture; beat at low speed until combined. Cover and chill at least 1 hour. 5. Shape one level tablespoon of dough around each marshmallow; seal edges. Roll in granulated sugar. 6. Place 2 inches apart on parchment-lined baking sheets. Bake until cookies crack, about 6 to 8 minutes. 7. Cool on baking sheet for 2 minutes; transfer to wire rack to cool completely. 8. Store in airtight container. |
