My daughter-in-law gave me this recipe years ago and it is a firm favourite with never any left in the dish. Ingredients:
4 potatoes |
1 onion |
1 cup of grated cheddar cheese |
1 1/2 cups (375mls) cream |
1 packet of chicken noodle soup (homebrand works best) |
2 cloves crushed garlic, optional |
Directions:
1. Peel and thinly slice potatoes. Peel and slice onion into rings. Arrange a layer of overlapping potatoes slices into a small baking dish and top with a layer of onion, sprinkle some of the cheese on top. Repeat this until there is no potato or onion left. Make sure that you end with a layer of potato. Mix the cream and packet soup together and whisk gently. Pour over the layered potato and onion. Sprinkle with the left over cheese (about a handful). 2. Bake for about 40 minutes in a moderate oven until potato is tender, the cheese has melted and the top is golden brown. |
