This is from Men's Health Magazine, where the recipe is titled Asian Sloppy Joes. Because of the ingredients, I think of these as being more 'Southwest'. We tried them today for the first time and they were delicious! I modified the ingredients only to suit what was available to me. I think this would also be good on tortillas. Ingredients:
1 tablespoon vegetable oil |
1 medium red onion, diced |
1/2 cup celery, diced |
1 teaspoon ginger puree |
1 teaspoon minced jalapeno |
1 lb ground pork |
1/2 cup diced canned tomato |
1/2 cup barbecue sauce |
1 ounce jim bean whiskey |
1 tablespoon soy sauce |
1 1/2 tablespoons lime juice |
4 -6 sandwich buns |
8 -12 iceburg lettuce leaves |
4 -6 tablespoons guacamole |
Directions:
1. Heat a large saucepan over high heat. Add the oil and swirl to coat. Add the onions, celery, ginger, and jalapenos. Saute until soft, about 2 minutes. 2. Add the pork and brown lightly. 3. Add the tomatoes, barbecue sauce (I used Billy Bee), whiskey, soy sauce and lime juice. Bring to a simmer and cook stirring occasionally for 15-20 minutes or until mixture will mound sloppy-joe-style. 4. Toast the rolls. On the bottom half, place a leaf of lettuce, then scoop on the pork mixture. Top with lettuce, guacamole, and the top half of the roll. 5. Great with a pint of light beer. |
