I found this recipe in my husband's Men's Health magazine. It's delish! Ingredients:
3 tablespoons olive oil |
1 lb mushroom |
1 large onion |
1 tablespoon garlic, minced |
salt and pepper |
1 (28 ounce) can plum tomatoes, with their liquid, chopped |
1 lb ziti pasta |
1 lb mozzarella cheese, shredded |
Directions:
1. Bring a large pot of salted water to a boil. Heat oven to 400 degrees. 2. In a large skillet over medium high heat place olive oil, adding mushrooms and cooking until brown, about 5 minutes. 3. Add the onion and garlic; sprinkle with salt and pepper. 4. Lower heat to medium and continue to cook, stirring occasionally until veggies are soft, about 2 minutes. 5. Add tomatoes and simmer. 6. Meanwhile, cook pasta until just tender, it should still be too firm to eat. 7. Drain and toss with the sauce and about HALF the mozzarella. 8. Grease a large baking dish and pour the mixture into it. 9. Top with remaining mozzarella and bake until top is browned and cheese is bubbling, 20-30 minutes. |
