Mennonite Oatmeal Zucchini Bread - Sugar Free

Got this from a friend - it's the best I've ever had - the oatmeal is the trick to making this oh so yummy!
Ingredients:
2 cups coconut sugar crystals
3 eggs
1 cup oil
1 teaspoon vanilla
1 teaspoon salt
1/4 teaspoon baking soda
2 cups flour
1 cup quick oats
2 cups zucchini, grated
Directions:
1. Preheat oven to 350.
2. Grease and flour pans.
3. Cream splenda, eggs, vanilla and oil.
4. Add dry ingredients.
5. Mix till combined.
6. Add in oats and zucchini, combine well.
7. Bake at 350 for 1 hour or longer if needed.
