I have traditionally served this alongside a big pot of chili, but it really goes well with a multitude of meals. It is hearty and filling and makes a great accompaniment whenever you serve it. Ingredients:

                                                2 1/4 cups yellow cornbread mix |
                                                3 tablespoons sugar |
                                                1/2 cup oil |
                                                3 eggs, beaten |
                                                1 (8 1/2 ounce) can cream-style corn |
1 1/2 cups shredded cheese (your choice) |
1 large onion, finely chopped |
2 jalapeno peppers, finely chopped |

                    Directions:

                                1. Combine all ingredients and mix well. 2. Heat a well-greased 13x9-inch baking pan in a 400-degree oven for 3 minutes. 3. Pour batter into hot pan; bake for 20 minutes or until brown. Slice into squares and serve. |
