Menestra, Endive, with Beans, Bacon and Sausage |

A hearty Italian dish, pretty much the way my mother used to make it. Ingredients:
24 oz endive, raw |
1 onion, medium |
2 cloves garlic |
31 oz great northern beans |
60 grams bacon |
8 links italian sausage, mild |
8 cups water |
1 1/2 tbsp salt |
1 tsp black pepper |
1 dash cayenne pepper |
1 dash basil, dried |
1 dash oregano, dried |
1 dash italian seasoning, dried |
Directions:
1. Cook bacon, break into 1/2 pieces, set aside. 2. Cook sausage, set aside. 3. Saute onion and garlic in some of the fat. 4. Cut up endive and add stir into garlic and onion. Cook for about 5 minutes. 5. Add all spices. 6. Add water. Bring to a boil, then reduce heat. 7. Add bacon and sausages. Simmer, covered, until tender (at least two hours). 8. Add beans and simmer for an additional 30-60 minutes. Tip: temporarily remove sausages while adding beans. |
