On Memorial Day, my son asked me to make him some clam chowder, as he was having an intense craving. This was what I put together for him, and it was even better that the usual New England chowder I usually make. Ingredients:
1/2 cup butter |
1 small red pepper, minced |
1 onion, minced |
1 large carrot, minced |
1 cup water |
1/8 teaspoon cayenne pepper |
1 teaspoon salt |
1 teaspoon black pepper |
2 tablespoons parsley |
2 (16 ounce) cans sliced potatoes, drained |
4 (6 ounce) cans minced clams |
1/4 cup flour |
1 cup water |
1/2 gallon half-and-half |
Directions:
1. Melt butter, add minced veggies, saute 5 minutes. 2. Add 1 cup water, cover, simmer until veggies are soft. 3. Mix cayenne, salt, pepper and parsley; add to veggies. 4. Add potatoes and clams. 5. Mix flour and 1 cup water; add to veggies and stir 2 minutes. 6. Add half-and-half and heat through, but do not boil. Stir while heating to thicken. |
