Memas Fried Breakfast Apples

Mema made these for topping our Sunday waffles.
Ingredients:
6 medium tart cooking apples
3 tbsp of butter
1/2 tsp of ground mace
1/2 cup of sugar (or less, this is to taste)
Directions:
1. Wash the apples, do not peel.
2. Cut in 1/8 inch sections and remove the cores with a small melon baller.
3. Melt the butter in a cast iron skillet over medium high heat.
4. When the butter stops foaming, add the apple slices and saute gently until lightly browned, 10 to 15 minutes.
5. Turn frequently but gently.
6. Reduce the heat to medium low.
7. Sprinkle the mace and sugar evenly over the apples.
8. Stir gently to mix.
9. Cover and cook until syrup carmelizes and the apples are glazed about another 10 minutes.
10. Good as a side dish at dinner with pork or ham, too.
