This is also a shortbread. Ingredients:
1 cup all-purpose flour |
2 teaspoons cornstarch |
1/2 cup confectioners' sugar |
1 cup butter, softened |
1 1/2 cups flaked coconut |
Directions:
1. Preheat oven to 300 degrees. 2. Mix flour, cornstarch, and sugar in a bowl. Blend in butter to form a soft dough. 3. If dough is too soft to handle, cover and chill. 4. Shape into 3/4-inch balls. Roll in coconut. 5. Place 1 1/2 inches apart on ungreased baking sheets. Bake for 20-25 minutes, or until lightly browned. |
