These delicious cookies really do melt in your mouth! They are very similar to another popular cookie, but these contain no nuts; especially nice if you don't like them in baked goods or have an allergy to them. Read more We like them with the vanilla flavoring, but feel free to experiment with lemon, almond, or whatever suits your fancy. Ingredients:
2 cups all-purpose flour |
1/8 teaspoon salt |
1 cup (2 sticks) unsalted butter, very soft |
2 tablespoons granulated sugar |
1 egg yolk |
1/2 teaspoon vanilla extract |
powdered sugar |
Directions:
1. Heat the oven to 325 degrees. 2. In a medium bowl, whisk together flour and salt; set aside. 3. In a large bowl, cream together butter and 2 Tablespoons granulated sugar. Add egg yolk and vanilla. One cup at a time, stir in flour mixture. Roll dough into 1-inch balls and place on ungreased or parchment paper lined baking sheet. Bake 20-25 minutes or until very lightly browned. 4. Remove cookies from baking sheet and roll in powdered sugar while still slightly warm. Roll again after they have cooled completely. 5. Note: If you use salted butter, omit the 1/8 teaspoon salt, as there will be enough in the butter. |
