This is a lower cal recipe I like to make in place of taco salad-it's really good as a side dish, too! Ingredients:
bag of salad mix |
1 can black olives; drained and sliced |
1 can black beans or red beans; drained & rinsed |
1 pint grape tomatoes; rinsed & cut in half |
1 med. size bag of nacho cheese tortilla chips; crushed |
8 or 12 oz. shredded cheddar (low-cal if desired) |
fat-free catalina salad dressing |
Directions:
1. Mix all the ingredients except the crushed chips. 2. Chill in a covered bowl for 30 min. or until ready to serve. 3. Mix in crushed chips. 4. Serve with fat-free Catalina dressing. 5. Enjoy! :) |
