Melon with Minted Lime Dip |

For a refreshing summer side dish for any meal, our Test Kitchen recommends these marinated melon balls with a cool, creamy dip. You can also serve this fruity treat as a light dessert. Ingredients:
1/4 cup sugar |
1/4 cup water |
6 tablespoons lime juice |
2 tablespoons minced fresh mint |
2 teaspoons grated lime peel |
2 tablespoons minced fresh gingerroot |
8 cups melon balls or cubes |
minted lime dip: |
1 cup (8 ounces) sour cream |
2 tablespoons sugar |
1 tablespoon lime juice |
2 teaspoons grated lime peel |
Directions:
1. In a large bowl, combine the sugar, water, lime juice, mint, lime peel and ginger. Add melon balls. Cover and refrigerate for 1-6 hours. 2. Thread melon onto wooden skewers or toothpicks. In a small bowl, combine dip ingredients. Serve with melon. Yield: 8 cups fruit (1 cup dip). |
