Ingredients:
3 cups diced ripe yet firm cantaloupe, from a 3-lb. melon |
2 cups diced fresh pineapple, from a 2-lb. pineapple |
1 red bell pepper, seeded and diced |
1/2 red onion, diced |
1 tablespoon grated fresh ginger |
1 small jalapeño, seeded and minced |
2 tablespoons lemon or lime juice |
1/4 cup chopped fresh mint leaves |
2 tablespoons olive oil |
salt and pepper |
Directions:
1. In a large bowl, mix melon, pineapple, bell pepper, onion, ginger, jalapeño and lemon or lime juice. Stir well, cover and chill for at least 30 minutes or up to 6 hours. Just before serving, stir in mint and oil and season with salt and pepper. Serve cold. |
