Ingredients:
1 medium cucumber |
3 cups cubed cantaloupe |
2 tablespoons frozen pineapple juice concentrate |
1 tablespoon water |
1 teaspoon vegetable oil |
1/2 teaspoon chili powder |
Directions:
1. Cut cucumber in half lengthwise; cut each half crosswise into 1/4-inch-thick slices. Combine cucumber and cantaloupe in a medium bowl. 2. Combine pineapple juice concentrate and remaining 3 ingredients, stirring well. Pour mixture over cantaloupe mixture; toss lightly. Cover and chill at least 1 hour. Toss lightly before serving. |
