Melon Balls With Rum and Lime |

Dress up melon balls with a flavored syrup. Requires 3 to 5 hours of chilling. Ingredients:
2/3 cup granulated sugar |
1/3 cup water |
1 teaspoon lime zest |
6 tablespoons fresh lime juice |
1/2 cup light rum |
2 quarts of assorted melon balls |
fresh mint leaves (to garnish) |
Directions:
1. In a small saucepan, mix the sugar and water. 2. Bring to a boil, reduce the heat and simmer for 5 minutes. 3. Add the grated lime peel and cool the mixture. 4. Add the rum and lime juice. 5. Pour syrup over the melon balls. 6. Chill covered, for 3 to 5 hours. |
