Melon and Prosciutto Salad With Strawberry Salsa |

Chef Grant Morgan from Hotel Zaza in Dallas, TX has a refreshing fruity salad that will get you in the mood for spring. Very easy to make, and delicious. Ingredients:
1 cantaloupe |
1 lb prosciutto, thinly sliced |
2 cups strawberries, diced |
2 tablespoons sugar |
2 tablespoons sunflower oil |
1 lemon, zest of |
1/2 teaspoon fresh ginger, finely chopped |
Directions:
1. Peel, seed and clean cantaloupe; cut into bite-sized pieces and set aside. 2. In a separate bowl, mix sugar and strawberries by mashing together with a spoon. 3. Mix in oil, lemon zest and ginger into the strawberry mixture and combine well. 4. Arrange the melon and prosciutto on a plate, spoon salsa over. 5. Serve immediately. |
