This is one of my favorite desserts from my childhood. My mom made it in a jelly roll pan but I like mine in a 9x13.. makes them thicker and chewier! Ingredients:
2 eggs (separated) |
1 1/2 cup packed brown sugar |
1 cup shortening |
1/2 cup granulated sugar |
1 tblsp cold water |
1 tsp. vanilla |
2 cups all-purpose flour |
1/2 tsp. salt |
1 tsp baking soda |
1/2 - 3/4 of a 12 oz bag of chocolate chips |
Directions:
1. Beat 2 egg whites (save egg yolks for dough) until fluffy and stiff. 2. Gently add in 1 cup of brown sugar. 3. Set aside. 4. Cream together: 1 cup shortening, 1/2 cup packed brown sugar, 1/2 cup granulated sugar. 5. In a small bowl gently beat the egg yolks, 1 Tblsp cold water, and 1 tsp. vanilla. 6. Add to shortening/sugar mixture and beat for 1 minute. 7. Combine: 2 cups flour, 1/2 tsp. salt and 1 tsp baking soda. 8. Gradually add flour mixture to shortening/sugar/egg mixture. 9. Beat until dough forms. 10. Press dough into greased 9 x 13 pan. 11. Firmly press chocolate chips into the dough. 12. spread egg white mixture over the top. 13. Bake at 350 degrees for 30 minutes or until top is nicely browned. 14. I like these bars cooled completely before eating, but my younger daughter loves them hot and melty right from the oven! |
