Melissas Crispy Peanut Butter Cookies |

This is a crispier-than-your-average-peanut-butter-cookie! I like to use crunchy peanut butter and throw in a handful of salted peanuts or peanut butter chips. If I am making them plain , my sons like to use different things to make decorative patterns, like the bottom of a crystal glass, a potato masher, etc. Ingredients:
2 1/2 c. all-purpose flour |
1 t. baking powder |
1 t. baking soda |
1 c. margarine, softened |
1 c. creamy or crunchy peanut butter |
1 c. granulated sugar |
1 c. packed brown sugar |
2 eggs |
1 t. vanilla |
extra granulated sugar |
Directions:
1. Preheat oven to 350 degrees. 2. In small bowl, combine flour, baking powder, soda and salt. 3. In large bowl, beat margarine and peanut butter until well blended. 4. Beat in sugars until blended. 5. Beat in eggs and vanilla. 6. Add flour mixture and mix well. 7. Shape dough into 1-inch balls, (if dough is too soft to handle, cover and refrigerate 20 minutes or so.) Place 2 inches apart on ungreased cookie sheet. Using the back of a fork dipped in granulated sugar, flatten balls making crisscross pattern. 8. Bake 12 minutes or until lightly brown. 9. Cool completely on cookie racks. 10. Makes 6 dozen cookies. |
