This recipe from an old issue of the New York Time made wonderful; yielding, tender apples with , complex spices, soul- and belly-warming in their flavor and simplicity. This recipe is a real winner - and I wanted to share with you. Read more .. Ingredients:
4 apples (i used empire) |
dab butter |
splash maple syup |
brown sugar |
chopped pecans |
baking raisins |
white wine |
whole cloves and cardomom |
or powdered 1/8 tsp of each |
Directions:
1. peel off a strip of skin around the stem of the apple. 2. using a small paring knife, or corer, core the apples, 3. slit six times apiece, 4. put them in a buttered cake pan. 5. put a dab of butter and a splash of maple syrup into each apple cavity. 6. mix together some brown sugar chopped pecans, and baking raisins, 7. divide this mixture between the apples. 8. pour maple syrup into a bowl, 9. add white wine, a cinnamon stick, a piece of ginger and some ground cardamom and cloves 10. mix it all together and pour this into the pan around the apples. 11. Place pan in pre-heated 325 oven. 12. Every ten minutes or so, baste the apples with the liquid (alternately using a brush or a spoon) until the apples are tender. |
