Colorful mixture of garden fresh vegetables. Ingredients:
2 medium zucchini, trimmed |
1 medium yellow squash, trimmed |
2 large carrots, peeled |
1/4 cup butter or 1/4 cup margarine |
1/2 teaspoon salt |
1/2 teaspoon pepper |
1 lemon, juice of |
Directions:
1. Shred zucchini, yellow squash and carrots. 2. Melt butter in skillet over medium high heat. 3. Add vegetables and quickly saute, about 3 minutes. 4. Add salt, pepper, and lemon juice and toss gently. 5. Serve immediately. |
