an easy main dish-can be served hot or cold. Ingredients:
4 large tomatoes |
1 red pepper |
1 yellow pepper |
1 green pepper |
1 eggplant |
2 onions |
2 tablespoons olive oil |
3 garlic cloves |
2 teaspoons salt |
1 teaspoon pepper |
2 tablespoons balsamic vinegar |
200 g orzo pasta |
200 g tuna (canned) |
Directions:
1. roughly cube all vegetables. 2. spray baking tray with olive oil and put veg in one layer. 3. drizzle with balsamic vinegar & olive oil, crushed garlic,salt & pepper. 4. Roast in hot oven appx. 10 minutes. 5. Remove from tray and mix with flaked tuna. 6. Serve over pasta. |
