Wow is all I can say about this delight. With olives, zucchini, red pepper, onions, eggs, feta, basil and parmesan all mixed together into one delightful elegant and very tasty dish you can't go wrong.
Ingredients:
1/4 cup chopped pitted kalamata olives
1 medium zucchini chopped
1 red pepper diced
1/2 cup chopped white onion
1/4 cup olive oil
9 large eggs lightly beaten
1/2 cup crumbled feta
1/3 cup sliced fresh basil
1/2 teaspoon salt
1/2 teaspoon freshly ground pepper
1/3 cup parmesan cheese
basil for garnish
Directions:
1. Cook first 4 ingredients in hot oil in skillet over medium high heat stirring constantly until vegetables are tender.
2. Combine eggs, basil, salt and pepper.
3. Spray pie dishes or glass baking dishes with non stick cooking spray.
4. Line bottom with crumbled cheese, then vegetables, then basil.
5. Pour egg mixture.
6. Sprinkle with parmesan cheese.
7. Bake at 350 for 1 hour.
8. Remove from oven and allow to set several minutes before serving.
