Medjool Dates Stuffed With Spiced Mascarpone |

I made these for a wine tasting today at a local winery. Perfect for when it's too hot to bake and you just want a little sweet treat. Ingredients:
spice mix |
2 teaspoons chinese five spice |
2 teaspoons mild curry powder |
1 teaspoon cinnamon |
pinch of ground cayenne |
spiced marscapone |
8 oz mascarpone cheese |
honey, to taste |
1 tablespoon spice mix |
1 tablespoon heavy cream |
2 pounds medjool dates, halved and pitted |
Directions:
1. Spice Mix: 2. In a small pan, toast the spices until fragrant. 3. Spiced Marscapone: 4. Combine the ingredients and beat the Mascarpone until it is slightly thickened and lightly peaked. Using a pastry bag (or you can cut one corner of a plastic sandwich bag), pipe the cheese into the halved and pitted dates. I garnished mine with honey roasted almonds. 5. Note: the cheese mixture can be made up to two days ahead, but should not be piped into the dates until the day they will be served. |
