vegetables and beans Ingredients:
1 2/3 cups great northern beans, canned |
28 ounces tomatoes, canned |
2 zucchini |
1 onion |
1 cup mushrooms |
1 tbsp olive oil |
Directions:
1. In a big saute pan, saute onion, mushrooms, zucchini in olive oil, season with salt, pepper, thyme, oregano - about 10 minutes or more. Add tomatoes and simmer, add strained liquid from can, simmer for another 10 minutes. Add rinsed beans. cook through. 2. Voila. Good alone as a side or over rice as a main. |
