Mediterranean Vegie Fritters |

2 tablespoons chutney or 2 tablespoons relish |
1/2 cup parsley, chopped finely |
300 g kumara, grated |
1 zucchini, grated |
2/3 cup plain flour |
1 egg, lightly beaten |
salt and pepper |
vegetable oil, to fry |
Directions:
1. Mix all ingredients but oil in a bowl. 2. Heat oil in large non stick fry pan. 3. Spoon tablespoons of mixture into pan. 4. Cook 2 -3 minutes each side till cooked and golden. 5. Drain on paper towel. 6. Serve with extra chutney. |
