This is a great light sandwich! Ingredients:
1 soft cracker bread, halved (lavosh) or 1 large flour tortilla |
4 ounces hummus |
1/4 cup fresh parsley, chopped |
8 ripe olives, sliced |
1 small cucumber, thinly sliced |
1 small tomato, seeded and chopped |
1 ounce feta cheese, crumbled |
Directions:
1. Spread hummus on the bread to within 1/2 inch of the edge. 2. Add parsley, cucumber, olives, tomato, and cheese on top of hummus. 3. Roll up and serve. |
