very good and balanced version of a tuna salad. Ingredients:
italian tuna packed in olive oil-i buy this in bulk at costco |
about a cup of barley- already cooked |
grape tomatoes-chopped |
capers |
black wrinkled olives-pitted and roughly chopped |
baby arugula |
lemon juice |
extra virgin olive oil |
salt |
freshly cracked black pepper |
Directions:
1. Mix all ingredients in a bowl and toss gently. 2. *Add as much or as little as you like of each, according to personal preference-ie: if you like salty, add more capers or even some caper juice! 3. Serve with a couple of pieces of whole wheat crisp bread |
