A light and somewhat unconventional tuna salad that I created and really loved. Great in a wrap with some lettuce. I'm sure it would be good on a sandwich too. Ingredients:
5 oz light tuna |
3 oz diced tomatoes |
0.08 avocado |
1 tsp extra virgin olive oil |
1 oz reduced fat feta cheese |
Directions:
1. Drain tuna, put in a bowl 2. Add a 1/2 to 1 Tbsp of the liquid that the tomatoes were packed in and then add 2 or 3 Tbsp of diced tomatoes 3. Add about a tsp EVO and 1/8 or 1/10 of an avocado, diced 4. Further crumble feta cheese when adding 5. Mix all together, being gentle as to keep the avocado in pieces and not mashed 6. Season with adobo or salt and pepper, or garlic powder...whatever suits your taste 7. The flavors blend nicely overnight but this isn't necessary |
