This is from Whole Foods cookbook. Sounds a little strange, but it is excellent! I usually cut it in half. Serve on a sandwich, lettuce or with crackers. Ingredients:
4 (6 ounce) cans albacore tuna in water, drained (solid white in water) |
1 (14 ounce) can quartered artichoke hearts, drained well |
1/2 cup chopped red pepper |
3/4 cup sliced greek olive, such as kalamata |
1/2 small red onion, minced |
1/4 cup minced italian parsley (optional) |
1/4 cup minced fresh basil |
2 garlic cloves, minced (1 tsp) |
1 teaspoon dried oregano or 1 tablespoon fresh oregano |
1 cup light mayonnaise |
3 tablespoons lemon juice, fresh not bottled |
fresh ground pepper |
Directions:
1. Combine all ingredients. |
