Mediterranean Tomato Side Dish |

A simple side dish that would go well with just about any main course. It's made with grape tomatoes and seasoned with dried oregano. You could also substitute in dried basil, dried parsley, or other herb for the oregano if you prefer. Ingredients:
1 tablespoon olive oil |
1/2 cup onion, chopped fine |
2 pints grape tomatoes |
1/2 teaspoon dried oregano |
Directions:
1. Heat oil in a skillet over medium high heat; add onions and cook, while stirring, until golden, about 1 minute. 2. Add tomatoes, season with oregano, and cook, stirring occasionally, until some of the tomatoes burst, about 5 to 7 minutes. |
