I got this recipe from a vegetarian cookbook, tried it and realised how light and tasty it was! Very easy to make and ingredients can be modified to your personal taste; I always add more tomatoes but also black olives cut in quarters would taste great! Ingredients:
2 1/4 cups dry penne pasta |
450 g plum tomatoes |
275 g mozzarella cheese |
4 tablespoons olive oil |
1 tablespoon balsamic vinegar |
grated lemon rind |
1 tablespoon lemon juice |
15 fresh basil leaves, shredded |
salt & freshly ground black pepper |
fresh basil leaf, to garnish |
Directions:
1. Cook the pasta with some salt and olive oil. 2. Quarter Tomatoes and cheese into small cubes. 3. Mix olive oil, vinegar, grated lemon, 1 tbsp of lemon juice, and the shredded basil leaves. 4. Add to the above salt, pepper, and the tomatoes and cheese. 5. Drain the pasta well, and pour over the above mixture. Mix well and garnish with basil leaves. 6. You can add Mediterranean black olives to the plate, It will only make the taste even better! |
