Mediterranean Three Bean Salad |

A refreshing blend of flavors great for summer or simple dinners! Flavors tend to blend better after time. Ingredients:
1 (15 ounce) can cannellini (white kidney) beans, rinsed and drained |
1 (15 ounce) can garbanzo beans, rinsed and drained |
1 (15 ounce) can dark red kidney beans, rinsed and drained |
1/2 onion, minced |
2 cloves garlic, minced |
2 tablespoons minced fresh parsley, or to taste |
1/4 cup olive oil |
1 lemon, juiced |
salt and ground black pepper to taste |
Directions:
1. Combine cannellini beans, garbanzo beans, kidney beans in a mixing bowl. Add onion, garlic, parsley, olive oil, lemon juice, salt, and black pepper; mix well. |
