Mediterranean Style Zucchini Salad |

The easiest salad in the world! This is a very filling main for one great served warm with toast. Also a conversation-starting side dish cold with olives. Adapted from Leah Leneman's 'The Single Vegan' Ingredients:
1 small zucchini |
tablespoon olive oil |
teaspoon lemon juice |
less than 1/4 teaspoon minced garlic |
tablespoon minced mint |
Directions:
1. Wash zucchini. Cut into sticks. 2. Cook zucchini in just enough water to cover for about 5 minutes. You want them softer, but not squishy. 3. While zucchini is cooking, mix other ingredients well for dressing. 4. Drain zucchini well. 5. Drizzle on dressing just before serving. |
