Flavorful and colorful. I love this. Ingredients:
1 cup zucchini, sliced |
1 cup yellow squash, sliced |
2 cups bell peppers, sliced (i use a mixture of red, yellow, and green) |
2 cups broccoli florets |
1/4 cup vegetable broth |
2 garlic cloves, minced |
1/2 teaspoon dried basil |
1/2 teaspoon dried oregano |
1/4 teaspoon pepper |
3 medium tomatoes, chopped |
Directions:
1. Comine all ingredients except tomatoes in a large saucepan and bring to a boil. 2. Reduce heat, cover, and simmer for about 8 minutes or till vegetables are crisp-tender. 3. Stir in tomatoes and serve. |
