Mediterranean Style Summer Salsa |

Serve this on toasted baguette slices or with corn tortilla chips. You could also just add it onto a green salad. Ingredients:
1 cup mozzarella cheese, balls halved (fresh,cherry-sized) |
1/2 cup cooked corn kernel (fresh or frozen) |
1/4 cup chopped kalamata olive |
1 (4 ounce) can diced green chilies, drained and rinsed |
1 large tomato, chopped |
1 1/2 tablespoons chopped fresh basil |
1 tablespoon olive oil |
1/2 tablespoon lemon juice |
1/8 teaspoon kosher salt |
1/8 teaspoon pepper |
Directions:
1. Combine cheese, corn, olives, chiles, tomato and basil in medim bowl. 2. Whisk all remaining ingredients in small bowl, stir into corn mixture. Cover and refrigerate up to 4 hours, serve at room temperature. |
