Greek-inspired, this is for leek and lemon lovers everywhere. A tasty, full-of-flavor side to accompany a myriad of main dishes. Complements fried and/or grilled fish to a 'T.' Can use some of the tender green parts if necessary. Ingredients:
1/4 cup extra-virgin olive oil |
3 cloves garlic, finely chopped |
1 tablespoon white sugar |
2 pounds leeks, white parts only, finely chopped |
1 lemon, juiced |
salt and freshly ground black pepper to taste |
Directions:
1. Heat olive oil in a large frying pan over medium-low heat; cook and stir garlic and sugar in the hot oil until garlic is lightly browned, 3 to 5 minutes. Mix leeks into garlic mixture; cook and stir until leeks are lightly browned, about 10 minutes. 2. Drizzle lemon juice over leek mixture; season with salt and pepper. Cover pan and cook over low heat until leeks are tender, 15 to 20 minutes. |
