This recipe can't be found on here, so I'm posting it. ^_^ It goes great with Pita Bread, fried zucchini, battered(not breaded)+fried eggplant, other mediterranean dips, etc. Ingredients:
potato ('1 per person) |
garlic (to taste) |
lemon juice (to taste) |
plain soymilk/regular milk (not much) |
olive oil, melted butter, or melted earth balance margarine |
salt to taste |
Directions:
1. Boil and prep the potatoes as you would if you are making mashed potatoes. 2. Process the garlic and lemon juice a bit, so the garlic is smooth 3. Mash the potatoes really good, combine with the rest of the ingredients. Don't blend with a blender as it makes the potatoes glutinous in appearance, and takes away from the texture. You can mix via sporadic food processing, if mashing is too extensive/difficult. 4. Use as a dip for fried finger foods. This is a wonderful mediterranean dip that's often overlooked. It tastes a lot better than expected! 5. Serve hot or cold, topped with a bit of olive oil and some paprika and parsley, if desired (looks more festive) ^_^ |
