Mediterranean Seafood Chowder Ingredients:
1 1/2 cups yellow or red |
1 peppers, chopped |
1 onion, chopped |
3 garlic cloves, minced |
28 oz crushed tomatoes |
2 1/4 cups water |
1 can (14.5 oz) chicken broth |
1 cup long grain rice, uncooked |
1/2 cup white wine |
1/2 teaspoon thyme |
1/2 teaspoon basil |
1/8 teaspoon red pepper flakes |
8 ounces uncooked shrimp |
8 ounces cod |
Directions:
1. In a large pan, add the first 10 ingredients. Simmer for 20 minutes until rice is tender. Add the remaining 2 ingredients and simmer another 5 minutes until fish is cooked through. Serve. |
