Mediterranean Seafood Chowder
Ingredients:
1 1/2 cups yellow or red
1 peppers, chopped
1 onion, chopped
3 garlic cloves, minced
28 oz crushed tomatoes
2 1/4 cups water
1 can (14.5 oz) chicken broth
1 cup long grain rice, uncooked
1/2 cup white wine
1/2 teaspoon thyme
1/2 teaspoon basil
1/8 teaspoon red pepper flakes
8 ounces uncooked shrimp
8 ounces cod
Directions:
1. In a large pan, add the first 10 ingredients. Simmer for 20 minutes until rice is tender. Add the remaining 2 ingredients and simmer another 5 minutes until fish is cooked through. Serve.
