Mediterranean Sauteed Spinach |

A splash of fresh lemon juice makes a quick substitute for the tomato and cheese. Ingredients:
1 teaspoon olive oil |
cooking spray |
2 garlic cloves, minced |
1 (7-ounce) package baby spinach |
1/4 teaspoon salt |
1/4 teaspoon freshly ground black pepper |
1/2 cup chopped tomato |
3 tablespoons crumbled feta cheese |
Directions:
1. Heat oil in a large nonstick skillet coated with cooking spray over medium heat. Add garlic; sauté 1 minute. Add spinach, and cook 3 to 4 minutes or just until spinach wilts. Sprinkle spinach mixture with salt and remaining ingredients, and serve immediately. |
