Mediterranean Sausage Stew |

Ingredients:
2 tsp olive oil |
6 italian sausages (or cajun, preferably turkey), sliced into chunks |
12 oz chicken breasts (4), skinless, boneless, chopped into 1 inch pieces |
2 sweet peppers, one red one green, sliced into strips |
3 large potatoes (yukon gold), cut into 1 inch cubes |
8 oz mushrooms leave whole; cut large ones in half (4 cups) |
6 cloves garlic, coarsely chopped |
1 small onion, chopped |
2 cans undiluted chicken broth (10 oz ea) |
1 tsp dried oregano leaves |
28 oz can diced tomatoes |
1 cup coarsely chopped fresh basil or parsley |
1/2 tsp salt |
1 freshly ground black pepper (optional) |
Directions:
1. Heat oil in a large wide saucepan set over medium heat. Add sausages and cook, turning often, until lightly browned, from 3 to 4 minutes, removing to a large plate as they are browned. 2. Add chicken to saucepan and cook, stirring often until chicken is lightly golden, from 3 to 4 minutes. Once chicken is golden, remove to plate with sausages. 3. Add peppers, garlic and onion to pan. Stir often until tender-crisp, 3 minutes. 4. Stir in broth and oregano. Scrape up and stir in any brown bits from pan bottom to add flavour. 5. Add potatoes, mushrooms and tomatoes. Return meat with any juices to pan. Bring to a boil, stirring often. 6. Reduce heat to medium-low, cover and simmer, stirring occasionally, until potatoes are tender, 20 to 25 minutes. 7. Remove from heat. Stir in basil, salt and pepper to taste. |
