Hummus, yogurt, cucumber salad, olives, and pita round out this dish. Serve with mint tea. Ingredients:
2 cucumbers, peeled, seeded, chopped |
1/4 cup olive oil |
3/4 cup cilantro |
1/3 cup mint |
1 cup hummus |
1 cup yogurt |
2 whole wheat pita bread |
1/2 cup klamata olive, pitted |
Directions:
1. 1. Preheat oven to 350 degrees. 2. 2. Mince cilantro and mint. Combine with cucumber and olive oil to make the cucumber salad. 3. 3. Lightly toast the pitas in the oven for 3-5 minutes. 4. 4. Serve cucumber salad, yogurt, pita, hummus, and olives on a plate. |
