Mediterranean Salmon Salad With Couscous |

Another delicious salmon salad made on a platter to impress guests. Ingredients:
1 cup couscous |
3 green onion, chopped |
1 cup corn kernels |
2 eggs, hard boiled, peeled and quartered |
1/2 cup chopped pimento or roasted red pepper |
1/2 cup black olives, coarsely chopped |
1/4 cup fresh parsley, chopped |
2 cups cooked salmon |
4 tbsp. lemon juice |
2 tbsp. each, olive oil and water |
1/2 tsp. cumin |
salt and pepper |
mixed greens |
Directions:
1. Cook couscous in 1 1/2 cups water and let cool. 2. On a small platter layer mixed greens, couscous, corn, pimento, olives, green onions, salmon and eggs. Whisk together lemon juice, oil, water, cumin, salt and pepper to taste and pour over salad. Sprinkle with chopped parsley. Let guests serve themselves. |
