Mediterranean Salad Roll Ups

I got this recipe out of a magazine and my family absolutly Love it!
Ingredients:
4 flour tortillas
1 cup cooked brown rice
1/4 cup diced cucumber
1/4 cup chopped scallion
1 large tomato, chopped
1 tablespoon olive oil
1 teaspoon lemon juice
Directions:
1. In a large bowl, combine all ingrediants and salt and pepper to taste.
2. Mix well, cover and refridgerate for at least an hour.
3. Divide mixture evenly among the tortillas, fold ends and roll up.
4. May be prepared ahead.
