Try this... just do it ;-)... the combination of flavors are remarkable. The lemon juice knocks out the onion, and the mint just seems to smooth everything over - fabulous! I'm certain that there is a proper name for the salad, I just don't know it! Read more ! I was playing around with Greek salad in my mind, and I came up with this. Instead of using the red wine vinegar, I used fresh lemon juice; and instead of using oregano, I used fresh mint. The result was a pleasant tasting, very pretty, refreshing salad. Some friends had the opportunity to try this, and now has been requested to be served at two different functions, as well as whenever they visit LOL. Wonderful for summertime, I hope you enjoy this! Ingredients:
1 large red onion, thinly sliced |
1 english/dutch cucumber, quartered lengthwise and cut into 3/8 wide chunks (if unable to obtain the english cucumber, peel and seed a regular cucumber or two) |
1 large red bell pepper, cored, seeds removed, cut lengthwise into thin strips (julienned |
3-4 ripe medium tomatoes, cut into chunks |
1/2 cup chopped mint leaves |
juice of one lemon |
1/4 - 1/2 cup extra-virgin olive oil |
1-11/2 cup crumbled feta cheese |
freshly ground black pepper to taste |
Directions:
1. Combine all of the vegetables in a mixing bowl, add the mint and toss to mix 2. drizzle the lemon juice and is much olive oil as you desire over the mixture, and toss to coat. 3. Add the feta when getting ready to serve. Season to taste with black pepper. 4. If making this ahead of time - put in the refrigerator to keep cool, and bring out a little before serving to let warm slightly - this allows the flavors to come out a bit. |
