This is adapted from my 125 Meatless Main Dishes cookbook. Feel free to substitute other mushrooms for the oyster mushrooms. The dressing will keep for up to a month in the refrigerator, but you will need to bring small portions to room temperature before serving. Ingredients:
4 cups mixed baby greens |
1 tomato, sliced |
1 yellow bell pepper, sliced |
1 cup oyster mushroom |
1/2 cup olive oil |
1/4 cup balsamic vinegar |
1/2 teaspoon garlic powder |
1/4 cup fresh basil, minced |
1 teaspoon dried oregano |
Directions:
1. Whisk all of the dressing ingredients together. 2. Toss the salad ingredients together and divide onto 4 plates. 3. Drizzle about a tablespoon of dressing per plate. |
