Ingredients:
3 medium tomatoes |
1 teaspoon salt |
1 (16-ounce) can chickpeas, drained |
1/4 cup tahini |
6 garlic cloves |
1/3 cup olive oil |
1/4 cup lemon juice |
1 teaspoon salt |
4 (8-inch) flour tortillas |
6 ounces feta cheese, crumbled |
2 tablespoons thinly sliced fresh mint |
1/2 teaspoon pepper |
1/4 teaspoon paprika |
Directions:
1. Seed and dice tomatoes; sprinkle with 1 teaspoon salt. Let stand 1 hour in a wire-mesh strainer. 2. Process chickpeas and next 5 ingredients in a food processor until smooth. Spread mixture evenly over tortillas. Sprinkle with tomato, feta, and next 3 ingredients; roll up. Chill 30 minutes. Cut each roll diagonally into 1-inch slices. |
